Langoşi – rețeta tradițională
We know, the original recipe is one from Hungary but it is also prepared in Ardeal (central Romania) and the Tinutul Secuiesc, so it is hard not to see it as a local recipe. In the traditional Hungarian recipe, the simple fluffy lobsters are traditionally fried in an oil bath. Langoși is eaten with cream and cheese, with garlic or simple salt even with jam. Zacuscă de ciuperci
Mushroom “zacuscă” is a dish prepared for winter or for immediate consumption. The classic recipe is made with eggplant, mushrooms, bell peppers, tomatoes and onions. Also, the zacusca can be made either from mushroom or from yellow mushrooms.
Ciorbă de fasole cu costiţă afumată – Bean soup with smoked rib
Bean soup with smoked ham, rib or sausage. A fine and thick soup, with a lot of smoked ham, served with cream, tarragon and onion rubbed with salt and vinegar. We call it “bean soup” or “pasula juice”.
Bean soup with smoked ham, rib or sausage is made especially in winter, when the cold comes. It is a consistent food that takes the place of soup and the second way. After that we eat pancakes, donuts or cherries. However, as much protein as it has in it, you don’t need anything else.
Tochitură de porc
Tochitură of meat with sausages, liver and other additions, this would be the classic recipe of Romanian tochitură, tasty and colorful. Our grandparents, in the village, made something simpler: it was tradition to cut the pork’s first sliced pieces to cook them slowly in a deep pan. When the whole process was over, we served our tochitură with a large wheel of Moldovan Mamaliga (polenta) and necessarily pickles!
Grandma’s tochitură usually had small pieces of bacon with meat, chunks of liver, onion, garlic and all that slowly tempered tasted great. Not all restaurants know how to make a true tochitură, but we recommend you to order Moldovan tochitură with cheese and egg. If it has (at least) this ingredients you may have a real tochitură.
